Cooking With Us: e11: Marcial's Chipotle Chicken

Hola Everybody!

Ready for another episode of Cooking With Us?

This time we tried out a recipe our friend Marcial gave us!

That's me and Marcial the night he debuted the fantastic Chicken-Chipotle-Cabbage dish that wowed us both so much we begged him to give us the recipe!

Luckily for us (and you guys) he did!

Now I will say - I think we sauteed our cabbage and onions a little bit too long, and I also would have pulled the chicken a lot more before adding it to the sauteing mixture. Next time!

It still turned out great, however!

First, we started out with three breasts of chicken.


See the pot behind me? It has distilled water in it, and the chicken.
To which I added 7 or 8 cloves of garlic.
Marcial said use 1 or 2 per chicken breast, but I just grabbed a handful :)
I also smashed it before adding it.


Add some salt and boil for about 30 minutes.


This chicken boiled fast! ^-^


Then I chopped up a fairly large cabbage, and Theron came home and chopped it even finer!


Also chop up at least one large onion.

In a skillet or wok, put in oil!
 (We used olive oil of course.)


Saute your onion.
(I think we did this a bit too long).


Add cabbage and saute that too.
(Next time I will do both at the same time and for less time!)


Add in your chicken.
(I should have pulled this a lot more before adding it, but cooking is about learning right? :)


Now it's time to add the chipotles in adobo!
Marcial said one small can per chicken breast, but I think I ended up adding 4.


Stir, stir, stir!


Pull your chicken more because you didn't do it enough the first time ;)
And this is your final product!
Although we did add more onions for more crunch!


And once you taste it, you too will smile ;D


And if you're REALLY lucky, you will have a husband who pretends to bite your head. Yup.

For the recipe, I'm going to make it reduce the amount, ie the way Marcial told me!

Recipe:

1 chicken breast
- boil in a pot with 1 or 2 cloves garlic and salt

1 small head of cabbage
Some onions
- saute with oil

Cook for 10 or 15 minutes.

Pull your chicken apart then add it into the saute pan, as well as one small can of chipotles in adobo.

Stir it all up.
Enjoy!

Hola!

And welcome to Cooking With Us.

If I seem tired, it's 'cause I am.
I started trying to work out again yesterday and I'm exhausted today.

But anyway that's neither here nor there.

Today we're gonna make something that our friend Marcial made for a party we went to and gave me the recipe for. And it was freaking good!

And we haven't tried to make it yet so hopefully it'll turn out OK.

But anyway, we're gonna start by boiling our chicken breasts in water with salt and garlic.

Distilled water, because my husband would have it no other way.

That's a really big one.

So, we've trimmed our chicken breasts and now I'm gonna add a little more water... Some salt... and he said, one to two cloves of garlic per chicken breast, so I guess I'm gonna add six, 'cause I like garlic.

Ok, little more than six cloves of garlic but, that can't hurt, can it?

Now we're gonna bring it to a low rolling boil for about thirty minutes or maybe a little bit more.

And in the meantime I'm gonna cut up my other stuff.

I'm gonna cut up my cabbage into thin slices.

Come here... good boy!

Since I don't know how many onions I need I'm gonna start with the ginormous one.

The onion basically fills this whole bowl.

To saute everything I'm gonna use my wok, 'cause I am really messy.

Chicken's so easy to cook.  Chicken's awesome.

So Theron's home, and he's got Brigly. Theron chopped this up a lot smaller.

Now I'm gonna pull some chicken.

What does that mean?
That I was made in Texas...

Alright, now we're going to start with the sauteing process.

And we're gonna use ...olive oil.

So we're gonna start with the onions - Bam!

It's poppin' like popcorn!

He wants some chicken chicken, yes.

Well we've sufficiently cooked our onions and cabbage and now we're gonna add our chicken.

We're gonna cook it a little bit and then we're gonna add the chipotle sauce.

In Marcial's recipe he said one small can of chipotles in adobo but since we have three chicken breasts and I love it, we're gonna use way more than one.

Whatcha doin'?

I'm pulling it in the pot.

It's got the right color, it's got the right consistency.

We're gonna add the onions to this 'cause it's not crunchy enough.

Ready?

Ok, we just finished our chipotle cabbage and what-not chicken.

Well what do you think of it?

It's very good, and I'm hungry, so let's eat it.
